Notes: Ice machine baffle with accumulation of mold in the corners and along bottom edge of baffle. Cleaning schedule provides ice machine be cleaned about once/month. Look into more frequent cleaning as accumulation warrants. COS: Ice machine turned off to melt ice and clean today. Most every spoon in basket above cook line with dried food debris on food/lip contact surface. After cleaning and sanitizing (running through dish machine) recheck for cleanliness. Try scrubbing more before running through dish machine to loosen food debris. COS: Spoons all scrubbed and run back through dish machine during inspection. Walk-in cooler shut off for at least 2 hours to chop ice off freezer door (heat strip in that door not functioning) and walk-in cooler not turned back on after chopping ice concluded. Time and temperature control for safety foods being held in walk-in cooler cold holding above required 41F or below. Temperatures of TCS foods 44F --48F. Walk-in cooler turned back on. COS: Walk-in cooler back on 45 min 34.7F ambient temp and TCS foods between 42F - 45F and continuing to cool. Manager will recheck in another 45 minutes to ensure cooling reaches 41F. Final rinse temperature gauge not measuring required 180F although final rinse temperature inside machine using irreversible registering thermometer registering required internal temperature for hot water sanitizing. Gauge needs to be in good working order - recheck connection and gauge.
