Score: 88, Grade: B

Notes: Front steam well not keeping mashed potatoes and grilled chicken bites at required hot holding temperature of 135F or above. Holding mashed potatoes 125F - 130F and grilled chicken bites 105F. Steam well at front line also not keeping chicken tenders at required 135F or above for hot holding - back pan of tenders holding at 120F - 125F. Even though time is kept for hot holding, it is for quality and temperature should be at 135F or above. COS: Time reached for quality on all items so, items discarded. Water in steam wells very low, recommended water be added so hot water contacts pans to apply more heat to hot holding. For tenders, keep in one layer to keep in better contact with heat. Get better thermometer to allow for better temperature monitoring. The type thermometer being used to monitor temperatures, bimetallic stem thermometer, is not accurate for monitoring temperatures of thin foods. These type thermometers need to be inserted into the food a couple of inches to monitor temperature which is not easy when food items to be monitored are very thin. Purchase thermometer that can read temperatures from tip of shaft - digital - for better accuracy.
