Notes: Trash can blocking hand sink from easy access in cook area of kitchen. Hand sink must be accessible for use at all times so, nothing should be stored in front of the hand sink. Dining tables being cleaned and sanitized using one cloth stored in bucket of sanitizer between uses. Per regulations, if using bucket of sanitizer with cloth, must have two buckets with cloths where the first bucket of sanitizer with cloth would be used to remove soil from the tables and the second bucket of sanitizer with cloth would be used to rinse the table or a spray bottle of sanitizer with a paper towel may be used in place of the two buckets. Hood and vents with build-up of grease that is flowing down into the drip trough. Vents/hood need to be cleaned frequently enough to prevent accumulation of grease that can drip back onto food/food contact surfaces. Shelf under prep table, shelf under flat top grill with accumulation of food debris/grease/spilled rice and doors of coolers with sticky food debris build-up - clean more frequently to prevent build-up that can be attraction for insects/rodents. Accumulation of food/grease/trash under and behind cook line, sandwich unit, lowboy freezer, upright freezers and around water heater by back door. Good deep cleaning needed and a more frequent cleaning schedule needs to be adopted to prevent build-up that can be attraction for insects/rodents.
