Notes: Bucket of sponges and jug of dish soap stored in basin of hand sink at start of inspection. Hand sink must be accessible for use at all times so, nothing should be stored in the sink. COS: PIC had food handler remove bucket and dish soap from hand sink. 3-compartment sink with wash compartment set-up with dish soap and bleach and second compartment as rinse and then air drying kitchenware/utensils. Proper dishwashing is to setup 3-compartment sink as wash with dish soap only, rinse, sanitize (bleach and water at 50 - 100 ppm) and air dry. Soap must be completely rinsed off and then submerge kitchenware/utensil in sanitizer and air dry them. COS: PIC hand food handler set-up 3-compartment sink properly with sanitizing in last compartment and then air dry kitchenware/utensils. Leftovers of hash and gravy put into plastic containers with lids snapped on tight that will not allow for required rapid cooling of hot foods as required. COS: PIC put both containers in freezer with lids opened to cool. Hash just beginning cooling process, gravy mid cooling process. Monitor cooling as required. Apples out on self-serve buffet in wire rack not wrapped/protected from possible customer contamination. Fruit with edible peels must be wrapped or served from covered container using utensil for serving to protect fruit from any possible contamination during service. COS: Service done for day. PIC will have food handler re-wash apples an wrap them for tomorrow's service.
