Score: 88, Grade: B

Notes: There is no Certified Food Safety manager employed for this facility. Inspection report sitting on back counter top and barely visible to customers; should be posted 15 feet from the main entrance, 5 to 7 feet off the floor and in a location where customers can view from one foot away. Floor buckled in walk-in freezer where flooring meets in the center; should be smooth with no cracks to allow for proper cleaning. No test strips available to monitor the strength of sanitizer used in the three-compartment sink to sanitize kitchenware/utensils and in the containers used to store cloths used to wipe food contact surfaces between uses; need to obtain test strips. Light shield missing over set of fluorescent lights in front of walk-in cooler and freezer and over dry storage shelving/two-door reach-in blast chill unit; need to either be covered with a shield or shatterproofed.

Notes: Food handler loading soiled kitchenware/utensils into dishwasher wearing gloves and with same pair of gloves on began to unload clean kitchenware/utensils; gloves must be changed and hands washed if unloading clean and sanitized kitchenware/utensils with gloved hands. Only one spoon in top of three-door sandwich unit laying on top of newly stocked raw beef with chicken residue on spoon; must use separate utensil for each type of raw animal food in this cooler to prevent contamination. Cloths used to wipe prep surfaces at sandwich units laying on prep surfaces; cloths must be stored in sanitizer solution between uses. Most bulk food containers (sugar, flour, etc.) with handles of scoops buried in the food product; handles must be kept up and out of the food product.

Notes: Inside top of ice machine bin with accumulation of mold; needs more frequent cleaning schedule.

Warmer cabinet hot holding foods below required 135 degrees. No thermometer on-site for monitoring the temperatures of cooked, reheating, hot held, cold held and cooling food items; must have thermometer on-site to monitor food temperatures as required by regulations. Ceiling panels in kitchen are water damaged and could crumble and fall onto food surfaces below; must be replaced with plastic-coated, moisture-resistant type that can be cleaned. Floor needs a good cleaning underneath equipment where grease/food/dirt have accumulated in back prep area. Fluorescent light fixture/fluorescent bulbs over back prep area are not shielded; must be shielded to prevent any possible contamination of food/food contact surfaces from broken glass/powder from fluorescent bulbs.
