Notes: Food handler portioning out cooked chicken wings with bare hands. Once cooked, the chicken wings are considered ready-to-eat and must be handle to prevent bare hand contact - using gloves, utensils, deli tissue etc is acceptable. COS: Wings recooked for hot holding/service. Portioned bags of cooked chicken stored above rim of lexan container in top of 2-door sandwich unit (L) with temperatures of 56F - 58F. Portioned pasta stored above rim of lexan containers in top of same cooler with temperatures 47F - 48F. Time/temperature control for safety food (TCS foods) to be cold held must be held at 41F or below. Per manager chicken/pasta had been in cooler over 2 hours. COS: Both chicken and pasta voluntarily discarded. Stocking over rim of lexan containers does not allow TCS foods to be in enough contact with cold air. Will monitor staff to keep TCS below the rim of the lexan container in this cooler.
