Score: 87, Grade: B

Notes: Leftover queso not stored at proper low temperature. Cloths used to wipe food contact surfaces-kitchen and dining tables- stored in solution of soap instead of sanitizer as required. Plexiglas light sheild missing over a couple of the fluorescent light fixtures in back prep area and one Plexiglas light shield damaged.

Notes: Pans of leftover cabbage and beans not stored at proper low temperature. Self-serve salad bar does not have sneeze guard like rest of the buffet. Fruit set out in bowl for customers to choose; fruits that require peeling may be served this way, but apples and other fruits that allow peels to be eaten must be served from a covered container with service utensils or wrapped after washing to protect peels from contamination. Walk-in cooler not holding foods at required 41 degrees or below, was repaired after inspection.

Notes: Salad bar used to be against the wall and the wall served as a shield for the side of the bar without a shield; if the bar is to remain in the middle of cafeteria it needs to be pushed up against a wall or a new sneeze shield added to other side. Hot water sanitizing dish machine final rinse pressure needs to be adjusted to ensure proper coverage of hot water on surfaces of kitchenware/utensils for sanitizing; adjusted on-site.

Notes: Neither restroom hand sink has hot water at required 100 degrees. Containers used to shake wings not cleaned and sanitized after use the previous day, per person in charge the containers are cleaned and sanitized once per week; food contact surfaces need to be cleaned and sanitized every four hours of use. Two-door sandwich unit not holding foods in inside unit at required 41 degrees or below. Floors need detailed cleaning under equipment and at floor/wall juncture to prevent accumulation of grease and food debris.

Notes: Chili must be reheated to 165 degrees within two hours for hot holding; chili reheating for almost 3 hours did not reach 165 degrees, was discarded. Five packs of raw hamburger patties in reach-in at grill past use by manufacturer date on label. Mop sink has a large hole in the bottom near the drain; water and debris can become trapped in hole and become attraction for pests. Hot water faucet handle missing off faucet at mop sink. Floor needs detailed cleaning at floor/wall junctures in kitchen behind equipment; better cleaning needed behind water heater; mop water accumulating in broken tiles where group has work down. Evidence of rodent activity in kitchen and dry storage areas of the food service.
