Notes: Walk-in cooler holding Time/temperature control for safety foods (TCS foods) above required 41F or below - TCS foods 44F - 46F. Ambient cooler temperature on hanging thermometer 44F/45F - per log ambient temp of cooler 39F at start of day. Walk-in cooler is opened, closed and left open (with cool curtains) throughout the day for caterings and prep. Cooler temperature recovery may be too slow. COS: TCS foods put on ice and service call put in to check walk-in cooler. Beef Brisket, smoked chicken thighs and ribs cooked and cooled from yesterday with temperatures 46F - 65F (see temperature observations). Time/temperature control for safety foods to be cooled after cooking must cool from 135F to 70F within 2 hours and from 135F to 41F within a total time of 6 hours. Brisket large and cooled whole, chicken thighs in containers stacked on top of each other and ribs tightly wrapped. Cool large pieces of meat more quickly by quartering, limit amount of food in containers, wrap loosely to allow heat to continue to escape and spread containers out in cooler to allow air to circulate around containers for cooling. COS: All Time/temperature control safety foods (TCS) not cooled to 41F within a total of 6 hours voluntarily discarded. Discussed cutting brisket into smaller pieces, wrapping cooling TCS foods loosely and not stacking cooling TCS foods. Will also start cooling process in walk-in freezer and use cooling log to monitor cooling more closely. There are gaps under wood fencing around BBQ pit and gaps in screening of pit in corners and around wooden entry gate that can allow for the entry of pests. These areas need to be sealed to the outside to prevent points of entry into the BBQ pit cooking area.
