Foods in one-door lowboy cooler on top of one-door lowboy freezer and one-door upright reach-in cooler being held above required 41 degrees or below. Hotel pans of cooked green beans not cooled in correctly, must be cooled from 135 degrees to 70 degrees within two hours and cool from 135 degrees to 41 degrees within a total of six hours. In-use cloths in sanitizer container heavily soiled with food debris, cloths used to line tray with tea pitchers and tray with toothpicks, straws, etc. for customers; cloths must be kept in sanitizer between uses or stored clean and dry.
